
Our mill was built just over the mountains in North Carolina, by the Meadow Mill company who have been building them since 1902. Our dad Parmalee Shell bought the mill in 1969, and sent it back to Meadow's to have the mill completely overhauled and brought back to its factory condition.
Our mill is a stone burr mill, also known as a grist mill. Two pieces of Balfour pink granite mined in North Carolina grind together to produce our flours and grits. Unlike modern mills which crush the kernels between two rollers, a stone mill will shear it into finer and finer pieces, preserving the texture and flavour of the wheat or corn. Stone mills also produce less heat, which preserves more of the nutrients in your flour - we don't need to "enrich" our flour after burning away all of its nurients, it's enriched enough!
